This 24 month program teaches the learner more complex and advanced cooking methods and food service techniques. The first year completes the qualification in Food Preparation and Cooking while the second ear focus on Patisserie with more advanced and current industry applied techniques. Added to the current course content, is the addition of selective entrepreneurial modules combined with a workplace employability program.

We believe it is imperative for learners to know the current trending needs in order to give them the necessary platform to excel in this very competitive, high demand and highly skilled industry.

Four industry placements over the 24month tie period are incorporated to give learners first-hand experience and, at the same time, give them the opportunity to put their theoretical knowledge into practice. This will ensure the learner's culinary capacities to successfully enter the industry as an entry-level Demi-Chef de Partie (assistant section chef) or Commis Chef (apprentice chef). Some supervisory functions and operational responsibilities can now also be assigned to this level of chef.

This two year International Advanced Management Diploma in Culinary arts covers all the major theoretical and practical components of the kitchen operation. It also enables the student to acquire the managment skills necessary to manage a kitchen operation profitably, while at the same time adhering to world-class standards

Four industry placements over the two year time period are incorporated to give learners first-hand experience and the opportunity to put their theoretical knowledge into practice. Throughout the two year programme, learners are taught how to be creative and innovative whilst working individually and in teams.

Most importantly it will encourage graduates to develop appropriate and effective leadership responses to strategic opportunities and challenges which, in turn, will give them a competitive edge in a rapidly expanding marketplace.
